PRIZE MACHINE doesn’t play safe. Colombia’s Jairo Arcila Blackberry Co-Ferment crashing head on with the raw vibrancy of Huipil from Mexico. Funky, juicy and electric. Ripe blackberry skin, blackcurrant syrup and sour cherry hit first, followed by flashes of hibiscus acidity and a wine soaked sweetness that lingers. Arcila pushes fermentation to the edge. Whole blackberries drive an anaerobic ferment that floods Castillo with deep purple fruit, sticky sweetness and a punchy intensity. Huipil pulls it back just enough.
